Is it possible to use a wall-mount fan/light control with my old SMC Emperor (has a 3-speed fan switch, and on-off light switch)?
I understand I will need three wires to the fan.
My questions relate to the different types of wall-mounts I've seen (variable speed, 3-speed, 4-speed). Will any (or all) of them work with a fan that has three speeds built into it? Do the inner pull switch and capacitors get removed/replaced?

Yes, it is possible. Which switches you can use will depend on the wireing of your house, on some fan/light combo controls you need to have newer wireing with the "extra" wire for the light to be separate.
The three types you mentioned should work just fine, but the variable speed may make the motor hum a lot more. DO NOT remove any pull chains or capacitors, leave the pullchain on the high position, and the wall control will control the speeds. If you have the light with the fan on one switch, always make sure the fan is on high when you change the wall control position. If the fan is not on high, it may stall out on the lower speeds of the switch.

You'll want a control that has 3 or 4 speeds as opposed to infinitely variable. You dont touch the electronics, just leave the pullchains on high.

Like Dan said avoid electronics, if possible use a wall mount speed coil/reactor, they work very well and are easier on the fan's motor than the electronic counterparts.
