Those are cool! They sound really powerful. The humming is definitely from the variable speed control. Wherever you install them, they've got to be together! Something strange happened with that first video, it seems the first maybe minute and 20 seconds or so repeats itself... first time was an error because my ladder for my camera wasn't in the right position. And don't worry I plan on keeping these two together

sadly no but they work fine with out them it seems You may want to consider getting a 5 speed capacitor based control for when you finally install them, that should allow them to operate on slower speeds without the humming.

Controls with fans are harder to find, sometimes they were replaced years ago with an updated fan control... But Encons usually don't ever break.. I always ask for the original controls when going to pick up a ceiling fan from a Craigslist ad... Alot of times they want to use the control for the updated fan they are putting in it's place..

Capacitor based controls are 3 or 4 speed. 5 speed controls are transformer based. You want a 5-10-15uf capacitor based control IMO.

You could also get some Lutron 3 speed fan controls from Lowe's. They're about $6 apiece.

Lets say you take the fans that were purchased in this thread. You wire it up to a plug and just plug it in without any control. What speed would it run at? With the speed controller always having a capacitor on each speed, wouldn't that make it run faster on "high" on the control than if it were wired without a control?

A control should only slow down a fan. A fan without a control will run on high. If you find a control that speeds up a fan, rather than slows it down, something is seriously wrong and you should NOT use that control. My videos go into detail about this.
