I'd like to remove the original remote control receiver from my Hunter fan, model #23487 and use wall switches for the fan and light. I've gone through 2 of the receivers in the 14 years we've had the fan, and I don't want to buy another one at $60+, if I can even find one anymore. However, the receiver has capacitors, and I'm guessing they are required for the fan to work without the remote. Or are these capacitors only related to remote operation, with everything else that is required inside the fan housing? Any suggestions ?

Your fan is Hunter Ultima. One capacitor is used for start windings and other capacitors are used for speed other than high. So here are options:
1. You can try to find out which part in the receiver failed, and see if you can replace that part.
2. You can try to find out which capacitor is used for start windings, and use this capacitor to convert to single speed and use wall switch to change speeds. I have some Hunter fans with pull chain and I can try to help you wire it to single speed. There are 7 wires, one hot, one light, one neutral, and 4 for motor windings (gray, orange, red, pink). I would have to look into my Hunter fan and see where wires on reverse switch connect to.
3. You can get a better fan that blows more air, maybe Hunter 23847 instead of 23487, which is one fan that would probably blow more air.
